Coconut Oatmeal Lace Cookies

I was pleasantly surprised when I made these cookies as they are easy to make, only take 5 minutes to bake, and if like me you are not a fan of coconut flavor, then you are in luck.  Another great part of this recipe is that it contains no eggs, so my toddler can snack on the cookie mixture prior to baking the cookies.  These coconut oatmeal cookies contain some healthy fats from the coconut oil and fiber from the whole oats, which is always a bonus.  Note:  The recipe calls for oat flour, which I did not have on hand, so I used the food processor and 1/2 cup of oats to make the flour needed.  Go ahead, give it a try!

  1. Hey Nicole, question for you – to make the oat flour, you just put oats in a food processor and ground them until they were flour? Anything I’m missing?
