Soft and Chewy Oatmeal Raisin Cookies

One of the most requested treats my toddler asks for when he and I are out running errands is an “oatmeal cookie”.  So you can imagine his excitement over us baking them together at home.  He and I both prefer a soft and chewy oatmeal cookie with a slight crunch for texture and this recipe delivers.  It’s quick to assemble and bake, perfect for a morning or afternoon project with your little one.  To make it extra special add your favorite local ice cream to create a mini ice cream sandwich.  I stuck with the classic vanilla and you can see the yummy results below.  (Or make your own ice cream at home, check out a recent post: Homemade Vanilla Bean Ice Cream )
