Chicago Feature: Simplifying Life With Simple Mills Artisan Bread

Ever since my son could walk, he’s been my partner in crime in the kitchen. By welcoming him into the process, I’ve noticed that he’s more willing to try foods that he’s helped prepare, and has learned to love real food.

My role as a mother is to raise him with a good understanding of how to care for himself, both in solving everyday problems and taking care of his body. Teaching him to cook is fundamental to that. So when my daughter was born 11 days ago, I was determined to maintain the quality time spent cooking together.

With one in his learning tower and the other wrapped in a K’tan, I knew time would not be on my side to follow elaborate recipe instructions.

Enter Simple Mills, whose baking mixes and crackers are made with simple ingredients like almond flour, coconut flour, flax seeds, arrowroot powder and coconut sugar. Add a few eggs, oil, water and apple cider vinegar and your food is ready for the oven before it can even preheat! I love how their mixes are free of gluten, grains, soy, corn, dairy and gums/emulsifiers It allows me to whip up healthy snacks quickly, without sacrificing quality. Most importantly, I get to spend time with my little ones while doing something productive and it yields real results immediately (dinner!)
