Every Christmas my mom would make these chocolate mint squares and I remember the anticipation of them being ready to eat. I would peek in the refrigerator and touch the chocolate layer constantly to see if it was set, luckily this time around I had more control, or maybe it was the toddler distraction. Although these chocolate mint squares have three layers it’s not difficult the make. The cake only takes 30 minutes to bake and once cooled you add the two other layers, which are even easier to assemble. Place the pan into the fridge, chill so the chocolate sets up and you are ready to indulge. The different textures and subtle mint flavor is a perfect combination. Let the holiday’s begin!
