With warmer temperatures finally reaching New England, I have had popsicles on my mind.  These 4 ingredient avocado smoothie popsicles are based on a smoothie I have been making my son since he was just starting to eat solid food.  I had received Tyler Florence’s book, Start Fresh Cookbook, as a baby shower gift and it contained recipes ranging from baby purees to kid meals and was a perfect jumping off point for me to conquer this new developmental stage.  I made his recipe for avocado pudding and it was an instant hit.  As a new parent I was obsessed with trying to find the healthy food options and create a balanced diet.  I understand now that all kids go through food phases, so balance isn’t always possible.  So you can understand my excitement when he actually enjoyed this smoothie.

Over time I adapted the recipe a bit and have been making it ever since.  I still can’t get over that several years later he is still enjoying this snack.  Along the way the serving size increased and I recently turned this smoothie into a popsicle.  This 4 ingredient avocado smoothie popsicle was another way to make the same old smoothie exciting again for him, and it worked!  At this stage he can help me make the smoothie too.  He peeled the banana and also worked on his knife skills, while cutting the avocado.  So if you have a baby at home starting to explore different foods or a older toddler that loves avocado, this snack is for you.
