Today’s post was inspired by my toddler’s new found love for puzzles. A day doesn’t go by that we are not making and remaking his favorite construction site puzzle, so I thought it would be fun to make a functioning puzzle dessert. Small Batch Shortbread Puzzle Piece Cookies were the answer. There are cookie cutters on the market that are shaped in puzzle form, but I did not have them on hand, so I created my own simple template and cut the design and puzzle pieces out. A small batch recipe was the way to go here too as I didn’t need a dozen cookies in the house. I also didn’t want to make the puzzle too complicated. I used a shortbread recipe because I wanted a cookie that would keep its shape. Once the cookies cooled I did trim around the edges to make sure all the pieces fit. You can really be creative with this and apply frosting or chocolate, also different sayings, shapes and designs on the top. I went for classic white and dark chocolate along with numbers. My little kitchen helper loved playing with the cookies and of course taking nibbles along the way.
