Enjoy this on-the-go snack for kids and adults alike. Easy to make with five simple ingredients that you probably have in your pantry right now. They are no-bake and just chill in the refrigerator to provide great texture once you are ready to enjoy. Typically overly ripe bananas are great for recipes, such as banana bread, muffins and these bites. If you only have a perfectly ripe, yellow banana have no fear. Just preheat your oven to 300°, place the perfect yellow banana on a parchment lined baking sheet and bake the banana for 20-30 minutes, depending on ripeness. The yellow banana will not be a very dark brown/black banana and is ready for this recipe. You have brought out all the sweetness of the banana in a matter of minutes.
I add these to my son’s lunchbox (see Tuesday post) and have them available in the car for a quick snack. These bites are peanut and tree-nut free, so feel free to be creative and add a favorite nut to the recipe. This will add more protein and flavor to each bite.
