Excuse the interruption in your 2018 healthy eating schedule, but with all the snow days my kitchen helper and I have been dealing with it was time to get creative in the kitchen. Cinnamon Chip Snowball Cookies sounded like a perfect way to start. First, I received cinnamon chips as a Christmas gift this year. I know that sounds crazy, but since I cannot find them in any stores near me, I am forced to buy in bulk online, so it was a nice specialty item to receive for our 2018 baking season. Second, after so many snow days, I was running out of morning indoor activities, so next in line was an episode of Daniel Tiger. As I was sitting on the couch searching online for inspirational recipes using cinnamon chips, my kitchen helper and Daniel Tiger started chanting “snowball, snowball..” over and over again. Apparently that is the name of a bunny in their neighborhood. After hearing “snowball” 30 times, it clicked. Cinnamon Chip Snowball Cookies!
This small batch cookie recipe was a perfect amount for my family to enjoy and minimized the amount of powered sugar flying around the kitchen table. As I have mentioned in previous posts, my kitchen helper loves cinnamon based desserts, so of course he had to take a few nibbles of the cinnamon chips before starting the recipe. This recipe is pretty easy to assemble. The batter is crumbly so you need to press the dough in the palm of your hand to form a ball. Once the cookies cool for about 10 minutes, you are ready to roll them in sugar to give that snowball affect. My kitchen helper also enjoyed these cookies without the sugar. After one or two of these cookies we were ready to pile on our snow gear and play in the snow. Now what to make on our next snow day??? I better start preparing.
